Bacon Wrapped Dates

1/3 piece of bacon for every date. I use bacon from hormone/ antibiotic free pastured pigs and California medjool dates www.sundateusa.com are the ones I am using today. Pre heat oven to 350. First I blanche the bacon, which means I bring a pot of water to a boil and put the bacon in and then take it out as soon as the water comes back to a boil. I pour it in a metal collander. Then I peel the dates under running water. People with AI issues should peel everything that has a skin. It is a lot easier to peel the dates under running water. Then I take the seed out of the date. At this point the date is a bit mangled but it doesn't matter becuase you are wrapping it in bacon. Cut each piece of bacon in thirds and wrap a piece around the date. You can use a toothpick to hold it in place or no. Or you can use a half piece of bacon per date and lay the date on the tray on top of where the bacon meets. cook them for about 18 minutes, you have to flip them half way through for perfect evenness. and check them. You want to take them out when they are just brown, they are not good overcooked. Sorry I can't give you an exact cook time, but this place is too busy to keep track of time.
