AIP bison chili

7-10 celery stalks chopped
1 onion chopped
1 zucchini peeled and chopped
6-8 cloves of garlic minced
4 Tbs. Coconut oil, tallow, duck fat or bacon fat
2 lbs. bison
1 lb pork sausage (I have used andoiulle, Italian, but not breakfast)
1 Tbs sea salt
2 Tbs. dried oregano
2 Tbs. dried basil
1 Tbs cumin
2 cans organic pumpkin
16 Oz. broth, preferable home made bone broth chicken or beef

Instructions:

In a large soup pot heat the oil and sautee the veggies for a minute or 2 on medium
Add the meat and brown it, get it all combined with the veg
Add all the spices
Add the pumpkin and broth bring to a boil and then simmer for 35 minutes
Add more seasoning if you need to, I add herbamare to the bowl when I eat it.
